Raw Almond Joy Truffles

If you are like me and love coconut and chocolate you will love this dessert! This is a healthier version of an almond joy candy bar. These truffles are full of superfoods such as cacao and coconut oil! These truffles are great for dessert, a snack or breakfast and they are raw, gluten free and vegan.

Raw Almond Joy Truffles
1 cup pitted dates
1/2 blanched almonds
3 tablespoons raw cacao (powder)
1 tablespoons shredded coconut
2 teaspoons coconut oil
pinch of sea salt
1/4 cup shredded coconut for garnish

Place 1/4 cup coconut in a bowl and set aside. In a food processor add dates, almonds, cacao, coconut, coconut oil and sea salt. Process until it all comes together as a dough. Using a tablespoon as a measurement roll dough into 10 truffles. Roll each truffle into the extra coconut. Store in fridge or freezer. Enjoy!
