Mango Curry Chickpea Salad
This mango curry chickpea salad is sweet, spicy and full of flavor! I based this recipe off of a mango curry tuna salad recipe my Mom used to make all the time. I lighten it up a bit, replaced the tuna for chickpeas and came up with this super delicious recipe. The chickpeas give this dish a ton of clean protein. I love to serve this salad in a wrap, a warm pita, with crackers or on top of mixed greens.
1 can chickpeas rinsed and drained
1 cup fresh spinach
1/4 cup walnuts
1/4 cup crasins
1 tablespoon vinegar
1 tablespoon hot curry
2 tablespoons vegan mayo
2 tablespoons mango chutney
Sea salt and black pepper to taste
Place all ingredients in a food processor. Pulse 4 - 6 times, do not over process or you will make hummus. Store in fridge. Enjoy!
