Perfect Poppy and Pear Dressing

I absolutely love this dressing! I have made many delicious soups that have  sauteed onions and apples or pears as the base, and this week in the middle one of my many day dreams I realized that the combination would make an amazing salad dressing!! This dressing is the perfect combination of sweet, tart and tangy and is perfect for a simple lettuce salad or to top off a warm bowl of lentils. I hope everyone enjoys this recipe as much as I do.

1 white onion thinly sliced
1 pear peeled and thinly sliced
2 tsps olive oil
1 clove garlic crushed or chopped
1/2 cup olive oil
1 TBS dijon mustard
1 TBS apple cider vinegar
1/8 cup poppy seeds
sea salt and black pepper to taste


Saute onion, pear and garlic in 2 tsps of oil on a medium heat until they become translucent (about 5 minutes). in a high speed blender add olive oil, mustard, vinegar and the onion/pear mixture and blend until completely smooth. Pour into desired container and stir in poppy seeds and add salt and pepper to taste. Makes about 3/4 cup dressing, store in fridge. Enjoy!
