Carrot Chocolate Chip Cookies

I have been making these cookies for years and people always ask me for the recipe, so here it is! The best part about this recipe is they are nut free and can easily be made gluten free! These cookies are easy to make and are always a crowd pleaser.


1 cup whole wheat pastry flour
1 1/2 cups rolled oats
1 heaping cup grated carrots
1 tsp baking powder
1/2 tsp sea salt
1/2 tsp cinnamon
1/2 cup melted coconut oil
1/2 cup maple or agave syrup
1/3 cup dark chocolate chips


Pre-heat the oven to 375 degrees. On the stove melt the coconut oil in a small pot on a low heat then add the maple or agave to the pot. In a bowl add the grated carrots, flour, baking soda, oats, cinnamon, salt and mix well with a spatula. Add the coconut oil and sweetener to the bowl and mix, then fold in the chocolate chips. On a sheet pan covered in parchment paper form cookies in desired size, cook in the oven for 12 minutes. If making small cookie adjust baking time to less. Makes about 10 cookies, enjoy!!

* To make the cookies gluten free use 1 cup Bob's Red Mill gluten free flour plus 1/4 tsp xathan gum.
