Healthy Muddy Buddies

Some people call these muddy buddies and some people call it puppy chow, but whatever you call it everyone loves this dessert!! I wanted to make this version a little healthier so I changed the margarine to coconut oil, the cereal to multi grain, and the powdered sugar to coconut flour. I know that the coconut flour sounds like an interesting choice, but coconut flour contains both fiber and protein and is slightly sweet and actually doesn't have a strong coconut flavor. Coconut flour is such a great replacement for the empty calories powdered sugar provides. This version much healthier and less sweet than the original recipe, but I guarantee you will still love it!

1 box multi grain chex cereal
1 cup semi sweet chocolate chips
1/2 cup natural peanut butter
1 tablespoon coconut oil
1 teaspoon vanilla extract
1 ¼ cup coconut flour


Place box of cereal in a large bowl and set aside. Combine chocolate chips, peanut butter, coconut oil and vanilla in a sauce pan on the stove on a very low heat, stir constantly until all the chips are melted. Pour chocolate sauce over cereal and stir with a spatula until all the cereal is covered in chocolate. Put all cereal and coconut flour in a large zip lock bag and shake well. Store in freezer and enjoy!
