Easy Baked Latkes

Happy Hanukkah! This latke recipe is super simple, healthy and delicious! I used frozen hash browns because I am having a really busy week, but feel free to use freshly shredded potatoes. Using a muffin tin to bake these makes them easy to make. Also, all the latkes will be the same size so they will all cook at the same time, no burnt latkes!

1 pound bag frozen hash browns
1/4 cup olive oil or grape seed oil
1/2 oat flour
1 tablespoon ground chia mixed with 1/4 cup water
1 teaspoon apple cider vinegar
Salt and pepper to taste
Hummus and sundried tomato for garnish


Preheat oven to 400. Make a chia egg by mixing the ground chia and water together in a bowl with a fork and set aside. In a bowl mix potatoes, oil, oat flour, vinegar, chia egg and salt and pepper in a bowl and mix well. In a muffin tin add one tablespoon of the mixture in every muffin compartment. Using your fingers or the back of a spoon pack the mixture, so it is tightly packed into each muffin compartment. Use muffin liners or cooking spray to prevent the latkes from sticking. Bake for 25 minutes. Top with your favorite hummus and garnish with one sundried tomato on each latke. Makes about 24 latkes. Enjoy!
