Dill Farro Salad

I have gotten many requests for this recipe over the years! It is so delicious, beautiful and healthy you will want to make (and eat) it again and again. To make this recipe gluten free change the farro for quinoa or brown rice. I hope everyone enjoys this recipe as much as I do!

Dill dressing:
1/3 cup olive oil
3 tbs red wine vinegar
2 tbs maple syrup
1/3 cup fresh dill (no stems)
1/4 tsp onion powder
1 clove crushed garlic
1/4 tsp dry mustard
Sea salt and pepper to taste

Salad:
1 8oz bag of farro  
vegetable stock (optional)
4 oz arugula
1/4 cup slivered almonds
1/4 cup crasins
1/8 cup sliced scallions

 

Place olive oil, vinegar, maple, dill, onion powder, garlic and dry mustard in blender, blend until smooth and set aside. Cook farro in water or vegetable stock according to package directions, pour dressing over farrow while it is still hot. In a bowl add farro, arugula, almonds, crasins and scallions and mix well. Serves 4. Enjoy!!!
