Tomato Basil Dressing
This dressing is so light and delicious! Adding the tomato to the dressing adds flavor and creaminess without adding any extra fat. This dressing is sure to liven up any salad. I like to make a double batch and use it all week in my salads or to drizzle on top of roasted veggie and grain bowls.
1/2 cup olive oil
juice of one lemon
1 clove garlic
1/2 tsp paprika
1 tsp dried oregano
1 tsp salt
1 tbs maple syrup
1/2 cup fresh basil
1 large tomato core removed
Place all ingredients in a high speed blender and blend until smooth, about 30 seconds.
