Roasted Garlic and Zatar White Bean Hummus
This white bean hummus is seriously delicious and addictive! This recipe was inspired by my Aunt, who always serves challah with slow roasted garlic and zatar at Friday night dinner and it is everyones favorite part of the meal. Serve this hummus at your next dinner party and everyone will be impressed!
8 cloves of garlic
2 tbs of zatar
1/4 cup olive oil
1 can white beans drained and rinsed
1/4 cup tahini paste
juice of half a lemon
2 tbs water
salt and pepper to taste
In a small sauce pan add garlic, oil, zatar and a pinch of salt. Bring pot to a boil then immediately down to a low simmer and cover, let garlic simmer for 20 minutes, stir once after 10 minutes . Add the beans, tahini, lemon and water to a food processor along with the zatar and garlic mixture. Process until smooth, then season to taste with salt and pepper. Serve hummus with raw veggies, pita chips or add to a salad to take it to the next level. Enjoy!
