Peanut Butter Chia Seed Pudding

This chia pudding is so good and easy to make! It is full of simple, healthy ingredients that you may already have in the house. You can let this pudding sit overnight so you have a delicious breakfast in the morning or satisfying snack to take to work!

1/2 cup almond milk
1 cup plain almond or coconut yogurt
2 tsp vanilla
3 tbs maple syrup
3 tbs natural peanut butter or cashew butter
1/4 cup chia seeds
pinch sea salt


Dark chocolate chips and strawberry slices for garnish

Whisk almond milk, yogurt, salt, vanilla and maple syrup together in a bowl. Microwave peanut butter for 10 seconds and whisk the peanut butter and chia seeds into the bowl, mix well. Place the bowl in the fridge and let sit for a minimum of 2 hours, the longer you let pudding sit in the fridge the more it will thicken. Serve with chocolate chips and strawberry slices. Serves 4 and will keep in the fridge for up to one week.
