Moroccan Chickpeas with Red Pepper

These Moroccan inspired chickpeas are so easy to make and are perfectly spiced! They are a great side dish or they can be served on top of salad greens for a light and delicious meal. These are so good you will want to make them again and again!

1 tablespoon olive oil
1 shallot sliced
1 red pepper cut into half inch cubes
1 clove of garlic chopped
1 can chickpeas drained and rinsed
1 tsp paprika
1 pinch chili powder
juice of half a lemon
salt and pepper to taste
sliced scallions for garnish (optional)


Heat olive oil in a saute pan, when the oil is hot add the red pepper and shallots. Cook on medium- high heat for 3 minutes before adding garlic, cook until peppers and shallots start to soften . Then add the chickpeas and spices continue cooking on medium- high for 3 more minutes, turn off heat. Add the juice of half a lemon to the pan and season with salt and pepper to taste. Add thinly sliced scallions for garnish if desired.
