Marinated Vegetable Slaw
This recipe is really easy to make and is perfect for summer! It is a great topper for burgers, tacos, avocado toast or to eat by itself. Adding these marinated veggies to a dish is a great way to add flavor and nutrition without adding many calories or fat. This dish is also really flexible you can play around and add any veggies you have in the house. Let me know what combinations you come up with in the comments!
3 carrots
5 radishes
Chives (one bunch)
1 cup water
1/2 cup seasoned rice vinegar
2 teaspoons ginger juice or 2 cubes frozen ginger
2 cloves garlic crushed
1 teaspoon maple syrup
1 teaspoons sea salt
pinch of red pepper
Use a vegetable peeler to cut carrots and radishes, for the carrots use the peeler to make ribbons (cut length wise) and for the radishes use the peeler to make thin rounds (cut width wise). Chop the chives using a knife or kitchen scissors into 1 inch pieces. On the stove add water, vinegar, ginger, garlic, maple, sea salt and red pepper to a pot and bring to a boil. When the pot is at a boil add the vegetables and stir once then turn off the stove and let everything sit for 20 minutes. Store in the fridge in the liquid, but serve drained of all liquid. Enjoy!
