Kasha (Buckwheat) with Pecans
Kasha is a comfort food for me, I grew up eating kasha with bowtie pasta every Friday night. Kasha is the perfect food to eat before a fast, so I wanted to post a recipe before Yom Kippur for a Kasha dish. Kasha or buckwheat isn't actually a grain it is a fruit seed that is naturally high in fiber and gluten free. Eating kasha can help regulate blood sugar making it the perfect pre-fast meal! This kasha recipe is savory with onions and toasted pecans, feel free to add pasta, mushrooms, eggs or chicken to make it a meal.
1 white onion thinly sliced
1 clove garlic crushed
1 cup buckwheat cooked according to package directions with stock
2 cups vegetable stock
1 teaspoon ume plum vinegar or balsamic vinegar
1/2 chopped pecans
Salt and pepper to taste
Cook 1 cup kasha with stock according to package directions, set aside. Caramelize onions with garlic, add the pecans when onions are almost done and saute with the onions for about three minutes,add vinegar when onions are done to deglaze the pan.
