Roasted Cherry Tomato and Lentil Bowl with Green Tahini
This recipe is super simple, but so delicious and full of clean protein and flavor! This is a perfect dish to serve as a side at a dinner party or for a healthy and easy lunch.
2 cups cooked lentils (according to package directions)
1 pound cherry tomatoes
3 cloves chopped garlic
1 tablespoon olive oil
1/2 cup tahini paste
1/3 cup water
1/3 cup lemon juice
1/2 cup parsley leaves
1/2 teaspoon sea salt
Preheat oven to 425 then cut tomatoes lengthwise place on a sheet tray with all tomatoes seed side up. Season tomatoes with olive oil, 1 clove garlic and salt and pepper to taste, then roast in the oven for 20 minutes. While tomatoes are roasting place the tahini paste, remaining garlic, water, lemon juice, parsley and sea salt in a blender and blend until smooth. When the tomatoes are ready mix them with the lentils place in a bowl and drizzle generously with the green tahini. Serves 4.Enjoy!
