BBQ Lentil Meatballs with Avocado Ranch Dip

I absolutely love these lentil meatballs, they are so easy to make and are perfect for a party!! This recipe is full of simple and wholesome ingredients, but comes together to make something truly delicious. I hope everyone loves this recipe as much as I do!

Meatballs
2 cups cooked lentils
1 purple onion diced
1 tablespoon olive oil
2 cloves garlic crushed
3 tablespoons ground chia seed
½ cup BBQ sauce
1/2 tsp sea salt

Avocado Ranch Dip
1 ripe avocado
1/2 cup vegan sour cream
1/4 tsp sea salt
1/4 tsp garlic powder
1/4 tsp paprika
2 tsp rice vinegar
1 tablespoon fresh lemon juice
1 tablespoon water
1 tablespoon thinly sliced chives

Pre-heat oven to 425 degrees. Sauté the onions and garlic in olive oil until translucent on a medium heat and set aside. Then add the lentils, onions, chia, BBQ sauce, and salt into a food processor. Pulse until the mixture comes together, there will be whole lentils still in the mixture. Form the mixture into a ball shape with about 2 tablespoons of mixture each. Then bake on a sheet pan in the oven for 12-14 minutes. To make ranch mash the avocado in a bowl then add the sour cream, salt, garlic powder, paprika, vinegar, lemon juice, water, chives and mix well, store in the fridge. Makes about 12 meatballs.
